Aloo Aubergine Koora

A hearty South Indian-style potato and aubergine curry with tangy tamarind and aromatic spices.
Ingredients
Potatoes- 2 kg
Aubergines - 3 medium chopped
Onions - 2, diced
Chopped Tomatoes -2 tins
Tamarind- lemon-sized ball, soaked in hot water & pulp extracted
Salt - to taste
Turmeric -/2 tsp
Homemade Chilli Powder - to taste
Method
1. Prepare Masala: Grind red chillies, coriander seeds, and cumin seeds into a powder.
Set aside.
2. Tempering: Heat oil in a large pan. Add mustard seeds, cumin seeds, urad dal, and chana da. Let them splutter. Add curry leaves.
3. Saúté: Add diced onions and saute till golden. Add turmeric and a pinch of salt.
4. Spice & Simmer: Add hopped tomatoes, tamarind pulp, sait homemade chilli powder, and the prepared masala. Mix well and simmer for a few minutes until the mixture thickens and the oil begins to separate.
5. Add Veggies: Stir in chopped potatoes and aubergines. Mix well to coat with the masala.
6. Cook: Cover and cook on medium heat until potatoes and aubergines are fully tender and flavores are wll combined.
7. Finish: Adjust salt and spice if needed. Garnish with chopped coriander leaves.
