BESAN CHILLAS RECIPE
( Savoury Gram flour pancakes. Gluten free)
SouthIndian4Me Onion Pakora Pre-mix packet 200 g makes 6 - 8 chillas
Water – about 250–300 ml (as needed for a smooth batter)
Oil
OPTIONAL TOPPINGS
Onion – 1 small, finely chopped
Tomato – 1 small, finely chopped
Green chilies finely chopped (as per taste)
Fresh coriander leaves
INSTRUCTIONS
In a mixing bowl, sieve the contents of the pakora Pre-mix and add the spuces left in sieve back into bowl.
Gradually add water while whisking to avoid lumps. The batter should be smooth and of pouring consistency (like pancake batter).
2. Check and adjust salt to taste. Now is the time to add additional red chilli powder or chopped green chillies.
Stir well. Let it rest for 5–10 minutes.
3. Cook the Chilla
Heat a non-stick tawa or skillet on medium flame.
Lightly grease it with oil.
Pour a ladleful of batter and spread it gently into a thin circle.
Drizzle a few drops of oil around the edges.
4. Flip and Cook
Cook on medium flame until golden spots appear (about 2–3 minutes).
Flip and cook the other side until crisp and cooked through.
5. Serve Hot
Serve immediately with green chutney.
