Devilled masala eggs

This is such a simple recipe, but the taste is phenomenal. The first time my friend, Timi, tried it, she was in rapture and I was wondering why! It takes me back to college days in Lucknow. We used to catch the bus into town on winter evenings to eat these at the 'Anda Wala'. good times. Hope you like it, too.
Ingredients
4 hardboiled eggs, peeled and cut in half
One large onion sliced
Salt
1/4 teaspoon SouthIndian4me Red Chilli Powder plus a pinch for the onions
1/4 teaspoon turmeric powder plus a pinch
A large pinch of SouthIndian4me Dhaniya Masala
1/4 teaspoon cumin seeds
Veg or sunflower oil
Heat a frying pan with some oil. Add the sliced onions and fry until translucent, adding a pinch of salt, turmeric powder and red chilli powder. Remove and set aside.
In a small bowl, add the salt, red chilli powder, dhaniya masala and turmeric. add a tiny bit of water to make a paste.
To same pan, add about 3-4 tablespoons of oil on medium heat. Once oil is hot, add the cumin seeds and let splutter. Then add in the spice paste made above. Lower heat and fry the spices for 15 seconds. Now, add the eggs cut face down into the spices and fry eggs until they have a good colour and lightly fried. Gently turn the eggs around and fry on other side. Pile the fried onions on top of the eggs. Garnish with coriander.
Sprinkle salt to taste. Sprinkle another pinch of Dhaniya Masala to complete the dish.
