Jeera Rice & Chickpea Salad

One portion SouthIndian4Me Jeera Rice.
Remove any whole spices you see...cinnamon sticks, cardamom etc.
Two tins Chickpeas. Drained and reserve some of the liquid.
In a large bowl add chopped veg - 2 tomatoes, 2 bell peppers, handful of radish, handful of spring onion greens, one small round courgette.
Warm the Chickpeas in microwave for couple of minutes and add to bowl.
Warm Jeera Rice in microwave for 2 minutes and add to bowl.
Add a Teaspoon of roasted cumin powder, olive oil, lime juice and salt to taste.
Mix well and serve warm.
This will make 4 large portions, perfect for dinner with Green chutney chicken kebabs.
