For those who are in possession of the prized SouthIndian4Me homemade masalas!
Method
If you use shop bought masalas, I don't know how good it will be as they tend to be flat and one dimensional in taste.
I say nearly because tandoori masala has more ingredients, but this will come very close and will be very ,very good. You can use same recipe for Tandoori aloo, cauliflower, paneer.
1 kg bone in chicken drumsticks/thighs. Make a couple of slits in each piece. Add bit of salt, turmeric, lime juice (never lemon, please). Keep aside in fridge. For veg option, use large chunks of potatoes, cauliflower or paneer.
A 400 ml tub of asda or supermarket brand plain yogurt. Drain any water and if you have time, strain yogurt in thin muslin to get thick yogurt But. I avoid Greek yogurt as it may be thicker, but it's also sweet and dish ends up weird.
To yogurt add:
Half Teaspoon salt
Half Teaspoon SouthIndian4Me Red Chilli Powder
One Teaspoon SouthIndian4Me Garam Masala
One Teaspoon SouthIndian4Me Dhaniya Masala
Juice of half lime
2 tablespoon of veg oil. Don't use olive oil.
1.5 to 2 Teaspoon ginger-garlic paste. Make fresh. Just grind equal quantities of ginger and garlic.
A bit of red food colour if you wish or avoid it.
Mix well. Taste and adjust salt, spices and lime. Add in the chicken or veg. Marinate in fridge overnight.
Grill in oven/airfryer or even better on coal barbecue. Chicken in oven takes about 30 minutes. Veg less time. Keep an eye on it.
Once done, squeeze bit of lime and a tiny sprinkle of Garam Masala and Dhaniya Masala. Toss and eat with red onion salad and green chutney.
Simply slice onions, add a bit of red chilli powder, salt and lime juice. Dd Coriander leaves if you wish. Test taste and allow to sit for 20 minutes.
Enjoy and tell me how it turns out! I don't have photos as its been a while since I made this!
